The BEST Vegan Peanut Butter Cookies
My oldest sister (who is the furthest thing from a vegan!) lovingly made these for me on my most recent trip to Durban. Originally based off a non-vegan recipe she has managed to tweak the recipe to make these taste so, so good. Enjoy!
Vegan Peanut Butter Cookies
Makes about 30 biscuits
Ingredients:
- 1 ¾ cup stone-ground flour
- ½ teaspoon bicarb
- 1 teaspoon baking powder
- 1 teaspoon vanilla essence
- 125g coconut oil
- ½ cup brown sugar
- ½ cup peanut butter smooth or crunchy
- 1 tbsp chia seeds 2 tbsp water (replaces the egg and produces a great texture!)
Method:
- Turn oven onto 170˚C
- Mix coconut oil, brown sugar and peanut butter into a mixing bowl
- Mix thoroughly
- Add the chia seeds and vanilla essence
- Add the flour, bicarb, baking powder
- Mix well
- Knead with your hands (like bread)
- Prepare a flat baking tray – spray with spray & cook
- Roll biscuits into round balls ( not too big)
- Squash flat with a fork
- Bake at 170˚C for 10 -15 minutes , or until golden brown
- Put on cooling wrack and biscuits will harden as they cool
- Put into a sealed container. They are nice kept in the deep freeze and are extra crunchy!
