The BEST Vegan Peanut Butter Cookies

My oldest sister (who is the furthest thing from a vegan!) lovingly made these for me on my most recent trip to Durban. Originally based off a non-vegan recipe she has managed to tweak the recipe to make these taste so, so good. Enjoy!

Vegan Peanut Butter Cookies

Makes about 30 biscuits

Ingredients:

  • 1 ¾ cup stone-ground flour
  • ½ teaspoon bicarb
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 125g coconut oil
  • ½ cup brown sugar
  • ½ cup peanut butter smooth or crunchy
  • 1 tbsp chia seeds 2 tbsp water (replaces the egg and produces a great texture!)


Method:

  • Turn oven onto 170˚C
  • Mix coconut oil, brown sugar and peanut butter into a mixing bowl
  • Mix thoroughly
  • Add the chia seeds and vanilla essence
  • Add the flour, bicarb, baking powder
  • Mix well
  • Knead with your hands (like bread)
  • Prepare a flat baking tray – spray with spray & cook
  • Roll biscuits into round balls ( not too big)
  • Squash flat with a fork
  • Bake at 170˚C for 10 -15 minutes , or until golden brown
  • Put on cooling wrack and biscuits will harden as they cool
  • Put into a sealed container. They are nice kept in the deep freeze and are extra crunchy!
